The roof holds a number and every row underneath has to add up to it. Your child sees one half of the pair and writes the other: 7 and what makes 10? Four rows per house means the same total gets practised from four directions, which is how the pairs stop being a calculation and start being something a child just knows.
Make 10, Make 20, Make 100
Easy stays with the pairs that make 10, the ones every later strategy leans on. Medium moves to 20, and Hard asks for complements to 100, which is really the same skill scaled up for older children. Wrong answers get two more tries before the partner is filled in, so nobody gets stuck. No timer, no account.
